I have been on the Ridiculously Big Salad plan with the Eat Like a Bear community for over a year now. While I am not perfect by any measure, I am still embracing salads and the hot veggie meals as a main stay of my eating plans.
One thing I did find was that I needed more protein in my meals so I have added in eggs back to my morning, breaking my fast at about 18 hours instead of the 23 hours. I am doing okay so far. I like controlling my foods. That is huge for me!
Eating just salads I know can be tough and there are plenty of modifications that you can do yet still keep it healthy keto and low carb.
Here are some tips:
- Keep my food prepped and ready to go if I can
- Use pre-packaged mixes if you have to – but supplement with fiber -celery, Cucs, Cabbage, and other veggies
- Add in Garbanzos or Kidneys, if your carbs allow, for additional proteins
- Add in Nuts and Seeds for texture, nutrients, and proteins
- Track your carbs, especially with additions
- Use the Hot Meals several times a week to break it up
Remember this is your one meal so pack in as much as possible to add interest, flavor, and to break the boredom.
