The older I get, the less I spend time cooking. I am all about preserving my time doing things I want to do, not what I have to do.

I like cooking, but I do not love it. So I look for ways to eat healthy, prepare fast meals, and keep it simple so there are fewer excuses.

The other day I was not feeling like eating a salad, so why not make a plate instead?? Check this out:

I have posted many times before about keeping your foods and veggies prepped when converting to a low-carb or keto lifestyle. It allows for easy snacks and meals, jut like this one!

All of my veggies are cleaned and cut, ready to go. I have boiled eggs, and added a jalapeño artichoke dip made with mayo, sour cream, parmesan, and no artificial ingredients or preservatives. It is awesome.

For this lunch plate, I added a ham and cheese sandwich using keto tortillas called Xtreme Wellness which are awesome. I get them at Wal-Mart.

I also got some fruit the other day moving a bit more into the low-carb arena, for those who are strict ketovores. This sliced, fresh pineapple was tasty and loaded with vitamins, fiber, manganese, and bromelain, which is great for inflammation. Oh, and let’s not forget the pickles! YUMMM

Overall, this was delicious and filled me up although next time, I am adding a small cup of cottage cheese. Oh, maybe some walnuts would be good too!

I never get bored with my meals because I do mix them up every day. My mantra- keep quick, easy, and simple!
