Ridiculously Gigantic Salad Inspiration

A few weeks ago I caught you up on the fact that I am settling back into my massively gigantic salads and intermittent fasting. It has become the only way I can lose wight.

I have to admit, it is hard keeping it going again but I am doing better than I thought. I have lost a few pounds and I have been rather consistent too. Not perfect, like I should be, but I am not going to beat myself up… yet.

So I thought I would share with you some of my giant salad bowls so you can be inspired too!

Here are three lunches from this past week that I enjoyed. Fast and easy by keeping everything prepped and ready to go.

These bowls are serving bowls so they hold a lot of food, but with 1 meal a day for my fasting schedule, I need the calories and the roughage to last 20-23 hours.

Ridiculously Gigantic Salad Inspiration

The first one is with ground beef, cabbage, eggs, and assorted colorful veggies. Super easy to whip up and enjoy with your favorite dressing.

The second one is with some steak I meal prepped and cut up for my salads. I also added cabbage, which I like better than lettuce all the time. Celery, chick peas, cucumbers, and eggs are in here too as well as a few more veggies for a well rounded variety.

The third salad was made with grilled chicken on top of my cabbage mix, along with celery, eggs, cheese, sugar snap peas, and chili beans in sauce that became my dressing. Yummmm! Hot and tasty on a chilly day!

So as you can see, there is no reason to become bored with eating salads. You can always find something different to add. Olives, pickles, artichoke hearts, kidney beans, dried cranberries, sunflower seed meat, walnuts. Let your imagination go and find something different every day!
