Rutabaga And Fingerling Potato Mash Recipe

My mother was German so growing up I had a big variety in the types of foods that I ate. There was not much waste in our home and my mother made almost everything, including baking our bread several times a week.

One of the things I remember her making was rutabaga. This root vegetable, some people sometimes mistakenly call a turnip, is not very well known or used in the US.

However, it is one that you should definitely check out and try to incorporate into your meals. The reason is the rutabaga is packed full of nutrients. Loaded with vitamin C, amazing amounts of fiber, magnesium, potassium, and Vitamin B6.

The best part about that is it tastes good! It has a bit of a sweet taste and the way my mother used to make it was she incorporated it into mashed potatoes. It also tastes awesome cubed and roasted with potatoes and carrots, maybe even a little broccoli.

Because it is a root vegetable it does take a bit longer to cook. So if you are going to roast it, you may want to parboil the rutabaga first.

I picked one up this weekend because I saw in the grocery store and being a root vegetable, fall is it’s season. I had also grabbed these darling fingerling potatoes which I just love.

So I thought I would cook up the rutabaga and mash them together with these beautifully colored potatoes as well. Then I can enjoy them for a few meals this week.

The rutabaga does take quite a while to cook to softness. I just cubed it and threw it in some salted water and let it slow boil away.

Once it was almost tender, I added the fingerling potatoes and finished the cooking process. They turn a beautiful orangey color when they are done. I then mashed them together with a few tabs of butter and it tasted amazing.

Perfect for a side to go along with a veggie on my whole food meatless plan. Plus, easy to reheat too.

Next time you’re at the store why don’t you grab one and give it a try? Great little addition you can sneak into the kids, and hubby’s, potatoes without anyone being the wiser. Plus, the added benefit of the nutrients and fiber is worth it too.
