Quick Meatless Monday Ideas

As I mentioned a few weeks ago when I was talking about my struggles that I was going to try and eat a little bit more plant-based diet and shoot for a vegetarian based plan.

I decided that I could not go completely vegan, yet anyway. In my house it would be a bit difficult because we do enjoy meat now and then.

Another reason is that I’m going through a transition period with menopause, and I didn’t want to completely change everything at one time. I’m having a real difficulty with low blood sugar and trying to balance out my vitamins and minerals.

I got home from vacation and honestly the last 2 1/2 days I have felt run down and sluggish. So I thought it would be a great time to kick off the vegetarian/plant-based eating and just see how I do.

I did really well over the weekend and did have some eggs Sunday but for the most part stuck with my non-meat eating.

Tonight I decided to make it a Meatless Monday and my husband had already made some thing so I just kept it simple and did a baked potato with a little bit of butter and seasoned pinto beans in sauce.

This combination gave me lots of fiber, kept me full, and I didn’t have to cook a whole lot. That’s the big plus right there. And it was delicious!

Quick Meatless Monday Ideas

I started today with my favorite protein loaded breakfast cereal that Lynn Terry Low-Carb Traveler got me hooked on. This is made with cottage cheese, almonds, and blueberries. For lunch, I had a egg salad sandwich made with sprouted wheat with flax and Chia bread. Also very filling.

I want to continue to look for more Meatless Monday meals and other ideas as well. I don’t want to eat the same thing over and over. Plus, I need to keep it simple since my husband is doing another program.
