Eggs and Avocado: Fast and Easy High Protein High Nutrition

When you are eating low carb, you have to do some research into how to get the most nutrition from the foods you incorporate into your meals. Adding fresh, organic veggies is one way, which is why I juice daily. I know I am getting high nutrition that I would not ordinarily get in my meals.

Eggs are a wonderful high-protein food and I eat a lot of them. So finding different ways to use eggs in my meals is important. Plus, eggs are so low in cost that they are a staple item for me and my family.

My hubby is a huge avocado fan and the other day we were digging through the fridge looking for something interesting to eat for lunch and we decided to try combining eggs and avocado slices for a quick lunch.

The result was a tasty and flavorful mixture. Hubby had his on toast with a bit of season salt. Mine is not on toast!

Now that I have modified my eating habits, I find myself eating smaller meals more often. It was a natural occurrence due to the fact that higher protein foods fill me up faster. Plus, due to the exercise I do, I end up burning through my foods faster too. Including foods like eggs and avocados really helps to boost my nutrition and it is a fast and easy meal for breakfast, lunch, or dinner!
