5 Minute Chicken Salad Recipe

At my house, Sunday always means some type of meal prepping for the week. This is especially true for my husband, who hates to remember to bring his lunch or prepare more than five minutes before he walks out the door.

So that usually means he takes something that isn’t the best for him or he eats at work, which usually means he’s eating something not on his eating plan.

I’ve been thinking about chicken salad over the past few weeks and while I was at Bunco the other night someone brought chicken salad from Costco. I just can’t eat that chicken because they pump so much sugar and other ingredients inside the bird.

So today I was putting in my grocery order to Walmart and I added a container of their rotisserie chicken that was already shredded. The ingredients are pretty darn clean and it’s already seasoned with their traditional seasoning flavoring. So I thought I’d give it a whirl.

Because it’s already shredded, it literally took me five minutes to make this chicken salad and it is delicious, I have to say.

5 Minute Chicken Salad Recipe

Ingredients:

1 pound pre-shredded cooked & seasoned rotisserie chicken (Walmart)
3/4 c Mayonnaise
2-3 ribs Celery, chopped
Salt, to taste
Lemon Pepper, to taste

Optional:
Crushed walnuts
Dried cranberries
Onion

Directions:
Go through the chicken and make sure to check for bones and break it down into bite-size pieces, if needed.

Chop your celery into fine pieces and add it to the chicken. Add in mayonnaise to your favorite consistency. Mine was about 3/4 of a cup maybe even a tad more. Then add salt and lemon pepper, which really woke up the flavor!

Mix well, Taste to adjust your seasonings.

Optionally, you can add onion. I know some people like spring onions in their chicken salad. I do not care for onions, but I considered adding a little onion granules if the flavoring needed. But I felt it was fine as is.

Serve it however you love; on bread, with crackers, on celery or cucumbers, or just by itself. I kept the main bowl as is for hubby, but to my serving I added crushed walnuts and cranberries. So delicious!!
