I’ve shared several pictures of my salads over the course of the past couple of weeks on this new eating plan. I just wanted to give you a brief update of my progress and some additional meals that I’ve been enjoying.
We can’t live on salad alone that’s for sure. It gets old pretty fast unless you mix it up like I have been doing. If you follow me on Instagram you can see some of my mixtures and concoctions. They are so delicious and filling
However, we do need to add some hot meals every so often just to fulfill our belly and give some comfort. Here’s a fast and easy alternative that you can have ready in 8 to 10 minutes. It’s definitely keto and definitely filling.
This is straight from Amanda Rose and part of the three-day kick-off for Eat Like a Bear. I find myself eating it several times a week because it’s always different.
One Pan Cauliflower Mash Up Keto Recipe
Ingredients
1 pound (16 oz) of frozen vegetables such as cauliflower, cauliflower rice, broccoli, or mix it up
1/4 cup chicken or beef broth
8 ounces of some kind of protein. Ground hamburger, shredded chicken, shredded pork, sliced steak, eggs, ham.
1 cup of shredded cheese like Colby Jack or cheddar
Season salt and pepper
Other seasonings you enjoy
Directions
Add the chicken stock to the bottom of the saucepan and add vegetables
Allow to come to a boil, cover, and steam
Mix in the meat and cover to allow it to get warm.
Add the cheese on the top, cover, and allow to melt through.
Remove from the heat and drain any excess liquid, if necessary.
Throw it in a bowl and enjoy.
FYI- In the Recipe maker, I added this as a 2 person meal but I eat the entire thing as my meal.
Results!
Between this and my salads plus eating on a 23/1 schedule, I have dropped 14 pounds in 13 days! I am not hungry and I’m not focused on food. I feel great and I can see huge changes already in several parts of my body.
I love it. And yes I have eaten with my family a few times, Very selective foods, and while it breaks my fast, I make sure to get right back on plan.
