Low Carb Taco Salad Recipe

I was craving food yesterday. I know that sounds strange, but there are some days that I just eat whatever is fast and convenient. I end up eating things like eggs, jerky, nuts, cottage cheese, protein bars, and other quick things like that. Yesterday, I needed food but it was so hot that last thing I wanted to do was cook and heat up the house. So I thought it was the perfect day to whip up my Low Carb Taco Salad Recipe.

Perfect for a fast lunch or dinner, this salad is loaded with healthy fats, greens, proteins, and best of all, flavor! Just right for a hot summer day or when you want a light meal. But don’t be surprised. This salad is filing!

Low Carb Taco Salad Recipe

Ingredients:

1 lb of ground beef, turkey or chicken
Packet of Taco Seasoning
1 can of Chili Beans in Sauce, partially drained
Shredded Cheese
Chopped Olives
Favorite Lettuce Mix, rinsed and chopped
Taco Sauce, Salsa or 1000 Island Dressing

Directions:

Clean and prepare your lettuce then set aside. Brown your meat, drain and prepare the taco seasoning according to directions. Set aside. In a small sauce pan, warm the chili beans in the remaining sauce. Meanwhile gather your cheese, olives and dressing that you love the most.

You can mix all of this together in one large bowl or serve it all separately for your family to assemble as they choose. This is delicious with a simple Taco Sauce, like La Victoria, as your dressing or your can choose a low-sugar Thousand Island or your favorite salsa. Your choice.
