I think I am beginning to understand the empty nest syndrome more and more. A lot of it in my case has to do with cooking.
I have no desire to cook much anymore. It’s just my husband and I 90% of the time so cooking a big meal just doesn’t really interest me.
My husband doesn’t always eat the same way I do so we kind of just figure it out as we go.
Because I’m not eating as much meat, I find myself going to the same type of foods over and over.
Easy Wild Rice and Chili Beans
So the other day I made a big pot of a wild rice blend so that I could easily add it to any meal I ended up making. A quick go to of mine is a small can of seasoned chili beans, which by the way are amazingly good, and then I added a cup or so of wild rice to it.
I’ve eaten this two times this week. It is full of fiber and so filling that I’m not hungry for 5 to 6 hours. Plus, it tastes great to me. And it’s easy to add a side of veggies or even throw it on top of a salad and enjoy it that way.
Why the Rice and Beans Combo?
There are many cultures that have rice and beans as their staple. This powerful combo is loaded with plant protein, nutrients, antioxidants, and fiber. This is great for regulating blood sugar and helps build a healthy gut.
Eating meat at every meal can be overwhelming to our system. I’m finding that having some meat a couple times a month is just fine by me. My system works a lot better and simple whole foods make me happy. That is a shocker actually!
I do still eat eggs a couple times a week so I really don’t feel I’m missing anything. Today I got brave and got on the scale and I actually lost 2 pounds from where I was last month. I’m happy with that since I wasn’t even trying.
