If there is one thing I have learned in the years I have been doing low carb, it is you have to keep the foods in your house that you can eat.
Running out of food options is like kryptonite. The same goes for meals that you want to take to work or prepare to reduce the chance of failure.
Planning and preparedness is the key to success!
Yes, I am saying that for me too!
My hubby has been working on low carb/keto foods over the past month. He struggles when it comes to lunches that he wants to take to work with him.
It is a critical time as his blood sugars are going up. His A1C is going up and he needs to get it under control quickly. I have been sharing my tips and tricks with him to help him get through the changes.
It is difficult to dump the garbage foods we love and are addicted to. Chips, fast foods, and other low quality carbs. But he is working on it and I am happy for him.
Easy Meal Prep for Keto and Low Carb
Last week, I helped him with some meal prepping and I wanted to share some easy tips and ideas with you too!
This is image is from his lunch and snack I packed him one of the days.
This is roasted chicken thighs I pulled from the bone. I made ham and cheese rollups with soft veggie/garlic cream cheese, then a baby gherkin inside. So delicious! I added walnuts and two pepper jack cheese sticks to round it out.
There is plenty of food so as not to get hungry. Plenty of protein to feed his energy. Healthy fats in the nuts and cheeses. Crunch and tasty delight in the rollups.
Granted, I should have used ham off the bone from the deli, but I was out and this was on hand. Got to reduce processed foods.
This took maybe 10 minutes tops for me to get together for him to take. The chicken was already prepared; I just shredded it and added a touch of salt.
The only thing missing is some berries. Blueberries or strawberries would have been a perfect addition. They are on my shopping list today!
I would have added a salad, but that’s just me. He is not a big fan of them, sadly!
Here are some easy planning and prep ideas for your keto meals:
- Get the right containers – glass if heating. The ones I used are from the restaurant supply and are easy to use, especially for guys that forget to bring home containers!
- Make a shopping list and keep one running for when you think of something to add
- Choose a day or two a week to cook meats ahead
- Clean and prep all fresh veggies and fruits when you get home from the store. Storage bags with a paper towel help greens last longer. Glass jars for berries.
- Keep it simple to start! Don’t try and cook new recipes every day. It gets exhausting and overwhelming.
- Remember that we are learning to eat to live, not live to eat
- We don’t have to have 3 squares a day if we don’t want to. Fasting is good for you! Meals, like I am showing you today, are okay! Be creative.
- Find joy in your foods, not hatred for mistakes
- Give yourself grace and forgiveness.
