Much like everyone I know, sometimes I get stuck in a rut when it comes to making dinner. I want to cook low carb main course recipes at home as much as possible but nothing sounds good or everything is frozen. Sigh.
My husband does step in when it comes to cooking a lot of the time since I work late into the afternoons several days a week. But he gets in the same rut as I do.
Over the years I have published many recipes here on my site for quick and easy dinners to make in a few minutes, so I thought I would do a round up of delicious low-carb recipes. I need to remember them and I think it might help you to break free from the same old stuff too!

My Low Fat and Low Carb Meatloaf Recipe is so tasty. Try adding Parmesan to replace the breadcrumbs or use oatmeal. Yum!
Famous in this house and something I make often are my grilled chicken thighs. A Perfect recipe to have for dinners, lunch, and snacks too.
