Low Carb Living: Ham, Cheese and Pickle Rollups

I have been eating mostly low carb for 8 months now. I have made some big progress in terms of weightloss and overall health. I still struggle now and then, but who doesn’t? One one thing that is an issue it trying to come up with recipes and foods that are lower in carbs that my family will eat too. They have not embraced the low carb lifestyle yet, despite my urging.

One of the things I love are easy to make recipes that you can use for snacks or meals. This recipe is one that I have been enjoying for years. My aunt in the mid west first made it 20 or so years ago for me and it has become a staple and a go-to for a quick lunch or light snack. They are packed with flavor too!

Low Carb Living: Ham, Cheese and Pickle Rollups Recipe

Ingredients:

2 slices of Deli Ham, cut in half
Spreadable Cream Cheese – I use the Garden Veggie
4 Mini Gherkin Dill Pickles

Directions:
Lay the ham out on a cutting board. Spread the cream cheese along the ham lightly. Add the pickles and roll lengthwise. Cut in half for 4 rollups. This will serve one person.

Options:
Cream cheese is not the best low carb option if you eat it in large quantities. However, I choose it since I don’t add a lot of cheese to this. However you can use thin sliced Mozzarella or even try a Brie cheese for a lower carb option.
