Couple of weeks ago I shared with you my simple daily salad recipes for the ridiculously big salads that I eat 4 to 5 times a week.
But I also enjoy hot meals several times a week too. So I wanted to share some of my recipes for a quick and easy one pot keto meal.
If you’ve been following me on this eating journey then you probably know I try to keep things as simple as possible. My food is prepped as much as I can manage and I try to keep it easy so I’m less tempted to fall off the wagon.
One Pot Keto Hot Meals for the Win
To make these hot meals is super quick and easy. The only thing you need to do is open up bags of frozen veggies and have your meat already prepped, or whatever protein you’re using.
Here’s an example of one of my meals.
One Pot Keto Hot Meal Recipe
- 1/2 bag of broccoli florettes
- One bag of cauliflower rice
- One handful of shredded cheese
- 1/4 cup of chicken stock
- Season salt to taste
- Pepper to taste
We made steak the other day so I had my husband make a couple of extra so I could chop it for my meals. So this one I basically just threw some stock in a pan and threw in my veggies.
Once they were cooked to pretty close to done, I threw in the meat and the cheese and put a lid on it to steam quickly. Then I drained any liquid and enjoyed it. Total time maybe 10 minutes max.
I have several other examples here of my hot meals but they are very similar. Some days I scramble some eggs. Some days I pick up a rotisserie chicken and shred it out. Some days it’s just ground hamburger.
I also switch up the veggies. Sometimes I add spinach or cauliflower florettes. You choose!
The goal is to keep it simple and nutritious. One I made the other day tasted just like chicken and rice. It was delicious. It was cauliflower rice and I was stuffed! Soooo good!
So I thought I would share with you what I’ve been doing. My progress is about 28 pounds down now. Not the fastest because I have been enjoying a meal once in a while with my family in the evenings. But normally I eat once a day with a 23/1 window because that’s what works the best for me.
