This past week has been a good food week. In fact, this weekend I was darn near perfect sticking to my low carb plan. I just had 2 teaspoons of sugar in my tea.
For me, the secret to successful eating plan is to always be prepared with something that I can munch on or eat when I’m hungry. That takes the temptation away for eating bad things or making poor choices.
So the other day I got some chicken on sale really cheap and I have a lot. Stocking up is good. LOL. So I thought I would make a low-carb high-fat chicken salad that I can munch on anytime or make for a delicious lunch.
Very simple and easy, this recipe you can whip up in just a few minutes.
Simple Chicken Salad Recipe
1 – 2 cups chopped cooked chicken or turkey
1 – 2 medium stalks celery, chopped
1 bunch green onion, finely chopped
1/2 cup mayonnaise or salad dressing (adjust depending on amount of chicken)
Salt and pepper to taste
That’s it! Just mix it all up in a bowl and enjoy. This is great for a rotisserie chicken you get from the store or for dinner leftovers.
Serving Suggestions
A few ways to enjoy this simple chicken salad recipe is on a cucumber slice. So tasty and fresh. Also, you can use a piece of romaine lettuce and enjoy it like a little boat of salad. Or, just eat it with a spoon! Perfect for those on a keto or low carb diet.
