A few months ago I shared our meatloaf recipe that we do on the smoker. It is so awesome. Tender, moist and perfect for meatloaf sandwiches the next day!
Smoker Meatloaf with Jalapenos
In the recipe I shared we used green chiles. My son was visiting so we cranked up the smoker and added jalapenos to it this time. A lovely kick that is not overwhelming at all!
One thing about this recipe is to make sure to add enough liquid so the binder is moist, and therefore, your meatloaf will be too. I use water normally but beef broth or a bit of milk works as well.
We also added some salted and seasoned potatoes to the smoker too. These did not come out as I thought as the guys did not slice them in quarters as I suggested. I had to cut them and microwave them for a few minutes. The flavor was still on point!
If you are going to do this, make sure to get the tiny baby potatoes and put them on before the meat. They took longer as they were whole and a bit bigger than baby ones, but definitely tasty!
