I don’t know about you, but I love meatloaf, especially if it’s juicy and moist. ! Meatloaf sandwiches anyone?
A couple of years ago my husband got a smoker and one of the best things that we have done is smoke a meatloaf. It is so delicious made that way! And a big plus, it does not heat up your house by cooking in the oven for an hour.
On the smoker, you get so many different types of flavors! So we kicked it up another notch the other day and made a huge batch of meatloaf that I wanted to share with you today.
I can’t believe I haven’t shared this recipe before, but let’s talk meatloaf.
Smoked Meatloaf Recipe
I shared my low-fat meatloaf recipe with you on this site before which you can totally grab and use as your basis to add a little bit of extra oomph to it.
So basically what we did was we took that standard meatloaf recipe linked above and removed the oatmeal. Instead, we used seasoned croutons as our binder. So much more flavor and you can choose your favorite flavor.
We usually use a butter and garlic crouton. I always keep a bunch of them in the house because they’re usually about a dollar a bag for the store brand and they’re fresher than any type of breadcrumbs unless you’re using your own, of course.
We also use some Dan-o’s Original Seasoning along with two 4-ounce cans of green chilies.
Now you can omit the chilies, obviously, if you want to. Or you can kick it up and add a little bit more spice by choosing a chopped jalapeño or any other type of pepper that you enjoy.
Then we smoked this baby in the smoker for about an hour and a half to two hours or so at 250. The internal temperature was approximately 160 when we pulled it. Of course, it rose up just a little bit more once it was off the smoker, and then it began to cool down.

BTW, this is a double recipe. Hubby loves to take extra to work to share with the guys. Devoured it, of course!
