Eating low carb doesn’t have to be boring. Smoking meats is something that my hubby enjoys doing and a few weeks ago he smoked a full brisket. It came out with amazing flavor and color. We froze half of it and the other day I pulled it out for dinner.
A brisket is a huge piece of meat and even half of a brisket can be a challenge to finish when you have a small family. So I was thinking about different ways I could incorporate the meat into meals, like my Quick and Easy Homemade Brisket Nachos Recipe I shared with you. Since I enjoy salads, I thought about a twist on the taco salad. Here is what I came up with.
Smoked Brisket Taco Salad
Ingredients:
8 oz. Sliced Smoked Brisket
1 can Chili Beans in Sauce
Chopped Lettuce
Optional:
Shredded Cheese
Olives
Tomatoes
Sour Cream
Directions:
Layer your favorite salad ingredients using the sauce in the beans as your dressing. Delicious!
Additional Thoughts:
Since the beans are a chili bean in a spicy red sauce, I saved the dressing and used just the sauce as the dressing. It was so delicious and saved a ton of calories too! Plus the beans give a great punch of good carbs and some proteins.
(The beans might be hard to find… They are not a Chili, like Wolf Brand or Dennisons, but more like a pinto bean in sauce, like Ranch Beans).
You can buy brisket, too if you don’t smoke your meats. Try places like Dickey’s BBQ to get it by the pound and enjoy!
