I know I need to do something to get this weight off. I have been “dieting“ since I was in college. And frankly, I’m tired of it and so is my body.
But I have put on so much weight again with the stupid quarantine. I know I have to do something drastic or it’s going to really start affecting me physically.
So I was analyzing what I did for years ago when I was really successful with my juicing and low carb plan. I figured out that once I tried to make it as easy as possible on myself and limited the options, I did really well.
Over the weekend I discovered someone named Amanda Rose. She’s been making a splash with her really big salad plan and I’ve been thinking about it over the weekend. Basically, she makes one massive salad a day and she eats one meal a day.
No that’s not it. A couple of times a week she also makes a hot meal of mixed vegetables and proteins etc. So you’re not only eating salad for the rest of your life.

But I was thinking about it a lot this weekend and I’m giving it a shot. My reasoning is going back to my juicing days. Prep it, have it all cleaned and ready to go, throw it in a bowl, and you’re done.
No more thinking about what to eat. No more thinking about who’s going to cook or clean up. Just keep it simple.
It’s almost like minimalism. When people have the same color of clothing or the same suit in multiple colors. They don’t have to think about what they’re going to wear because it’s always the same, yet different.
This one gives you options too. Different proteins. Different veggies. It’s like keto without all of the work! I don’t know. It makes sense to me.

Prepped:
1 Rotisserie Chicken – shredded
2 Cucumbers
2 Giant Celery heads
Radishes
Carrots
1 Small Red Cabbage, Shredded
3 Heads Romaine, chopped
1 can Garbanzo Beans, rinsed
1 can Kidney Beans, rinsed
Shredded Cheddar Cheese
Really Ridiculously Big Salad Recipe
Grab a big bowl. I used a medium-size mixing bowl!
1/3 of the lettuce
1/3 of the chicken
Big handfuls of the rest!
Your favorite Dressing
Because this is keto-ish, I did not worry about the fat content of the dressing. However, I did use Litehouse brand which is a low-carb, lower fat dressing already.
So big and so good, I could barely finish!
On to day 2. Let’s see how long I can go between this meal and tomorrows! I am excited actually! Feeling good about this decision!
