I don’t know about you, but sometimes I do get the munchies even when eating healthy. You get that unsatisfied feeling you need to do something about before it turns into a snack attack of bad things.

Most of the time, I turn to cut veggies with a little jalapeño artichoke dip. Or I’ll munch on some walnuts and pumpkin seeds. But sometimes that just does not cut it.

I saw this really fast, quick, and easy keto snack and I thought I would give it a try last night. This keto snack totally whips up within just a few minutes. Check out the recipe below.

Melted Cheese and Pepperoni Rollup

Here’s what I used.

  • Mozzarella cheese, shredded
  • Sliced pepperoni
  • Granulated garlic

I put the cheese in a nonstick pan piled in a tiny mound of cheese and spread it out a little bit. Then I let it set up for just a few seconds. Once it started melting, I added two slices of pepperoni and a shake or two of granulated garlic for some punch. (Basil or Italian Seasoning would be good too!)

Then I flipped it over and allow the cheese to continue to melt and giving it may be another 10 seconds or so. I then removed it from the pan and folded it over onto my plate. I could’ve probably let it go a bit longer to get really crispy, but I liked the gooey factor of the cheese.

Honestly, in the 45 seconds to a minute it took to make these, the taste was divine. That little extra pop of garlic really pumped up the flavor. It was melted and gooey and just a hint of that spicy pepperoni. Yum! It totally satisfied the munchies!

Definitely fast and easy to make. Plus, easy to keep the ingredients on hand for those days when nothing really satisfies.
