We eat a lot of chicken in this house due to the healthier aspect of it as well as being low in fat. I love trying new flavors of seasonings and sometimes even a marinade is great too.
Today, I want to share a delicious and easy recipe for my roasted chicken using a simple marinade of Olive Oil and a few seasonings.
I attend and even work a lot of vendor and craft type shows and one of my favorite vendors to purchase from is a local olive oil company located in the foothills of California. Sierra Olive Oil has been hand-making olive oils since 1995.
Their oil blends are fresh and flavorful, perfect for adding to recipes or even as a bread dipper. They offer 11 different blends like Red Chile/Garlic, Jalapeno/Garlic, Dillweed/Clove, Italian Blend, Sundried Tomato/Basil and many more. Last month, I was at an event and picked up a few bottles of Basil/Garlic and Rosemary/Garlic to enjoy.
Marinated Roasted Chicken Recipe
Ingredients:
1 Roasting Chicken or Fryer
Large 2 gallon zip bag
1/2 cup Flavored Olive Oil
Salt
Pepper
1/2 tsp Poultry Seasoning
1 tsp granulated garlic or 1 clove crushed garlic
Directions:
Place the cleaned chicken in the zip bag. Add in the oil and seasonings. Massage the oil into the meat and allow to sit in the refrigerator for 2-6 hours. Roast as normal in the oven or a rotisserie. Serve and enjoy!
