I have really stepped away from cooking big meals lately. Not only does it seem like such a chore, but for the most part, it is just my hubby and I for meals. So I look for easy to make meals that take little time and have little clean up. Plus, with low carb lifestyle, that is important too.
So here is a quick and easy chicken marinara that is much like chicken parmigiana. It is a simplified version that is healthy, low-carb and delicious too.
Low Carb Chicken Marinara Recipe
• 1-pound chicken breast, pounded into cutlets
• 1 8 oz bag shredded mozzarella
• Fresh marinara sauce or choose a jar version with no sugar added
Lay chicken breast in baking dish. Season with your favorites. Add marinara sauce to coat and top with shredded mozzarella.
Bake in the oven at 350 for 30-40 minutes, depending on the thickness of the breast. Temp must reach 180 degrees.
Serve with a side veggie or salad and enjoy!
