Low Carb Cauliflower Soup Recipe - A Midlife Wife

Eating low carb can be a challenge sometimes. There are favorite foods that you enjoy that have to be remade and tweaked and sometimes they just don’t give you the same satisfaction as the original did. Thankfully there are plenty of recipes that are low carb to start with and with a few minor changes you have a delicious meal.

We love soup in this house and I was pleased to find a Cauliflower soup recipe that was not only tasty but filling too! Give this one a try next time you are in the mood for soup.

Low Carb Cauliflower Soup Recipe

Ingredients:
1 Head of Fresh Cauliflower, cleaned and broken into chunks
1 Carrot, shredded
2 stalks of Celery, chopped
2.5 cups of water
2 Small Chicken Bullion Cubes or Veggie ones, if desired
3 tbsp flour
3 tbsp butter
2 cups of milk – 2% or whole works best
1 cup shredded Cheddar cheese
Salt and Pepper to taste

Potato Flakes – optional
1 small can of Corn, drained, optional

Directions:
In a large saucepan add water and your veggies, except the corn, if using. Bring to a light boil and add your bullion. Reduce your heat, cover, and allow to simmer for 15 minutes or until tender.

Meanwhile, in another saucepan, melt the butter then add the flour and combine to create a roux. Slowly stir in the milk and bring to a boil to thicken. Cook for 2-4 minutes at a slow boil. Reduce the heat and stir in your cheese. Add this mixture to the veggies, add in the corn, then stir to combine. Add in salt and pepper to taste. Allow to simmer for 5 minutes to combine flavors.

If you would like your soup a bit thicker, you can add in 1/2 cup of potato flakes or a low-carb alternative, and bring it to a boil.
