School is getting ready to start here in our area. So that means my schedule is changing. As an adjunct instructor at my local community college, I have different classes each semester and this semester I get both early-morning classes and late afternoon ones too. What that means is I need to figure out fast and easy low-carb lunches that I can take with me or quickly prepare so that I can eat a healthy meal before I head out the door.
Eating low-carb means sometimes I have to be a little creative. What I usually find myself doing is using my pantry staples and I craft a meal around that. This week I headed to the deli and grabbed some fresh deli meats as well as their delicious rotisserie chicken salad.
So using my basics that I keep in my house, I crafted a quick and easy lunch that I can eat on the run or throw in a bag to take with me.
Fast and Easy Low Carb Lunch
For lunch the other day, I chose some off the bone sliced ham, some sliced deli roast beef, 2 tablespoons of the chicken salad, 2 ounces of cheddar cheese, and 1 ounce of walnuts. This meal covers a lot of the basics – high-protein, a bit of dairy, and a bit of healthy fats. Plus, it’s was easy to enjoy and it’s very filling too.
I love using the staples in my pantry that allow me to create fast meals on the go. Eating low-carb does not have to be difficult. You just need to change your mindset a bit and realize that a meal can consist of bits and pieces yet still be filling and satisfying.
