At our house, we love quick and easy meals. Many times my hubby will cook for us so finding simple but wholesome meals is a priority for me. A few nights ago we had Taco night and with that I made a slew of meat.
With leftover taco seasoned meat, we can have quick burritos for lunch, but hubby had a different idea. He made a Taco Omelet and it was delicious! Omelets are one thing I am not great at making, for some reason! Go figure.
Here is the recipe so you can try it too!
Easy Taco Omelets Recipe
- 3 eggs, beaten
- butter
- seasoned taco flavor hamburger meat
- shredded cheddar cheese
- salt
- pepper
- Taco Sauce or Salsa
Directions:
Simply heat up your nonstick egg pan and add butter to coat.
Pour in the eggs and with a rubber spatula, run it around the pan a few times to make sure the egg is evenly distributed. Let it set.
Then add the seasoned meat and cheese to half of the eggs.
Fold the eggs over and flip the eggs so it cooks on the other side.
Once it is set and cooked through, remove it from the pan. Top with a bit of cheese and salsa.
