Are you a fan of Polenta? In certain areas of the south it is frequently cooked and enjoyed. However, Polenta comes from Italy and is made from ground cornmeal. It is anything but glamorous. It’s common, comforting, and inexpensive.
What is great about Polenta is that is can be versatile to cook with too. Here is an easy to make recipe from the folks at Fork and Beans that brings you the comfort of a home cooked meal, but a super fast solution for snacks or mealtime.
For those of us on a low carb diet, this can be a good alternative in small amounts because, according to Medical News Today, it is rich in complex carbs, a good source of fiber, and it is gluten free, and a lot of other pluses!
Easy Polenta Pizza Bites Recipe
INGREDIENTS
• 1 tube Ancient Harvest™ Polenta, cut into 1⁄2” slices
• 1⁄2 c. pizza sauce
• 1⁄2 c. cheese or vegan substitute
• Toppings of choice:
• minced basil
• sliced bell peppers
• chopped black olives
• chopped mushrooms
DIRECTIONS
1. Preheat your oven to Broil. Line a baking sheet with a piece of parchment paper and lightly
grease with olive oil spray.
2. Place the polenta slices on the baking sheet and broil for 2 minutes.
3. Remove from the oven and flip over with a spatula.
4. Spread the pizza sauce, cheese, and toppings of choice on top.
5. Broil another 2 minutes or until the cheese melts to your liking.
