I have always loved celery. I would snack on it with just a sprinkle of salt any time my mom had it in the house. Today, I use it in juice recipes and for snacks, mainly. The health benefits of celery are amazing.

Celery offers an excellent source of enzymes and antioxidants. It is also loaded with essential minerals and vitamins, like folate, potassium, vitamin B6, vitamin C, and vitamin K. Many people have started juicing it because it is excellent for reducing inflammation and helps to promote weight loss too.
Celery is like its own magical vegetable!
However, right now we are experiencing a shortage in celery. Some say it is from all of the rain and weather in California. Some say the shortage is due to the increase in companies juicing it.
The other day I was going to grab some for my juicing and it was $10 for 3 stalks at the wholesale store. Should have gotten it as in the grocery story it is over $5 a stalk!
Okay, so the price will be coming down because I think a lot of people will be bypassing it for a while. But when it is more affordable, make sure to add it to your snacks and juicing. In fact, if you have not added juicing for your health, you really have to try it. Some of my recipes are delicious! I promise!
For me, I am going to bite the bullet and add it back in to my shopping list. It actually does last a long time if you get a nice, fat stalk. Even if it is $5 for a while, it is still cheaper and healthier than so many other items!
