When there’s no time to layer lasagna, a bag of ravioli will come close to the real thing. Spend 5 minutes early in the afternoon and you’ll be rewarded with a hearty feast at dinnertime.

3 cups tomato pasta sauce (your favorite jarred kind) 750 mL
1 lb fresh or frozen ravioli 500 g
1 cup ricotta cheese 250 mL
1 cup shredded mozzarella cheese 250 mL

Pour a third of the tomato sauce into a 4- to 5-quart slow cooker. Top with half the ravioli, spreading it out in a roughly even layer. Dollop half the ricotta on top by the spoonful. Top with another third of the sauce, another layer of ravioli and ricotta, and the rest of the sauce. If you like, add about 1⁄3 cup (75 mL) water to the jar and swish it around to get all the sauce out, then pour over top.

Cover and cook on low for 4 to 5 hours or until pasta is tender. Sprinkle with mozzarella, cover and cook for 5 to 10 minutes to let the cheese melt while you set the table.

Serves 4 to 6.

This slow cooker version of one of the most popular Bridge recipes of all time is just as easy as the classic. And (sacrilege!) we’ve phased out the can of cream of tomato soup.

Vegetable oil
1 1⁄2 lbs lean ground beef 750 g
1 medium onion, finely chopped
4 carrots, chopped
3 celery stalks, chopped
1 bay leaf
1⁄2 cup pearl or pot barley 125 mL
1 tbsp sugar 15 mL
1 tbsp cornstarch 15 mL
Salt and black pepper to taste
1 can (28 oz/796 mL) whole tomatoes, with juice 1
3 1⁄2 cups ready-to-use beef broth 875 mL
2 cups water 500 mL
1 1⁄2 cups tomato sauce 375 mL
2 tbsp soy sauce 30 mL

In a large skillet, heat a drizzle of oil over medium-high heat. Add beef and cook, breaking it up with a spoon, until starting to brown. Add onion and cook, stirring, until beef is browned and onion is softened.

Scrape into a 4- to 6-quart slow cooker. Stir in carrots, celery, bay leaf, barley, sugar, cornstarch, salt, pepper, tomatoes, stock, water, tomato sauce and soy sauce. Cover and cook on low for 6 to 8 hours. Discard bay leaf.

Serves 10.

Tip: Hamburger soup freezes like a dream! If you’re serving a family of 4 or 5, let half the soup cool after cooking and ladle it into a freezer bag. Pull it out of the freezer and pop it in the fridge in the morning, and it will be thawed in time for dinner. Pour into a soup pot and reheat.

This cookbook is fabulous! From the large size font you can read easily, to the great pictures and wire-bound binding, this is a cookbook that you can rely on and use easily every day! I love this book!

A gorgeous array of recipes for the whole family are included in this book. Appetizers, soups, main meals, desserts, and so much more. This is a book that I will turn to over and over again. I found so many great recipes in here that are on my “Must Try” list. Not just a few, like in some books.

The authors offer us over 200 recipes in this baby! The binding and the set up of this book make it a user friendly cookbook that will last for years. Definitely one to grab!
