With the nest almost empty, many nights it is just myself and the hubby. Cooking for two is so different for cooking for many. Some days it takes the energy to whip up something quick and easy that doesn’t come out of the microwave or the drive through. Thankfully, we love eggs so one of my go to meals for breakfast, lunch or dinner is a quick and easy hash like meal that consists of sausage, potatoes and eggs. Perfect when cooking for 1 or 10. Affordable and so tasty too!
Fried Potato and Sausage Hash With Eggs
Ingredients:
2 Cans of Sliced Potatoes, drained
1 Kielbasa Sausage – sliced into rounds
1/4 onion, minced
8 Eggs, seasoned and beaten
Season Salt
Pepper
Granulated Garlic
1 tbsp butter
Directions:
In a cast iron skillet, brown your sausage, turning often. Remove from the pan and set aside. Add in the butter and then onions followed by the potatoes . Season with the salt, pepper and garlic to taste. Allow to brown. Once the potatoes are browned and warmed through, add the meat back in to the pan and combine to the flavors come together.
Meanwhile, in a non stick fry pan, prepare your eggs however you choose. Serve on the side of the hash along with toast, fruit or whatever you enjoy!
Serves 4 – halve this for 2, except the butter.
* Additional Serving Tip – Wrap this in a flour tortilla, add a splash of salsa and a touch of cheese and enjoy! Wrap in foil to go. YUMMMM
