I grew up on soups. It was an affordable way to feed a family and living in the midwest, it kept us warm too! I love soups and often make them for my family too.
One of my most requested soups I make is my version of the Classic Chicken Soup. This recipe is not only easy, it contains my secret ingredient for an amazing flavor that you will not find anywhere else.
This is an amazing homemade soup with a German twist, compliments of my Mom who taught me everything about cooking!
Simple to prepare and one to get everyone around the table tonight. MMMmmm so good!
Classic Chicken Soup Recipe
Ingredients:
Serves 4-6
6 Chicken Thighs, raw on the bone – skin removed
2 tbsp Chicken Soup Base or 2 large bouillon cubes
1 Carrot sliced
1-2 stalks celery with tops, diced
1 tsp Garlic powder – to taste
1/2 tsp Granulated Onion or 1/4 cup chopped onion
Salt & Pepper to taste
Maggi Seasoning to taste, at least 10 shots or more, depending on amount of liquid
Optional: Egg noodles or elbows, your choice. Rice is good too!
Directions:
- In a large soup pot, fill with water to the desired level. Add chicken and bring to a boil. Add enough soup base/bouillon to get a good chicken flavor. Add carrot and celery and all spices.
- Reduce heat to medium and allow to cook 30-45 min until chicken is cooked through. Pull chicken out and let cool, shredding it after cooling. Return chicken to pot allowing it to Simmer.
- In a separate pot, cook noodles to just al dente. Drain and rinse in cold water. Add to soup and simmer for an additional 5-10 min. Adjust seasonings as needed.
Serve with crusty French bread, sandwiches or crackers.
