When I was younger and my mom did not feel like cooking a big meal, she would make breakfast. I was never a big fan of breakfast for dinner until I grew older. Now I love it!
Mom would grab some staple items that we had in the house, like eggs, some type of sausage or meat and potatoes. She would then whip up what she called a Farmer’s Breakfast, similar to what she grew up on in Germany. Today I make this as well and my family all love it! Give it a try for breakfast, lunch or dinner!
Easy Farmers Breakfast Recipe
Ingredients
6-8 Eggs (usually 2 per person)
Kielbasa Sausage – sliced
3 Cans of Sliced New Potatoes or 3 potatoes quartered and sliced thin
Season salt
Pepper
Granulated Onion
Granulated Garlic
Instructions:
- In a large cast iron skillet or similar, brown the sausage until almost done. Remove from the pan and set aside.
- Add the potatoes to the skillet and brown them in the drippings from the sausage.
- Add your seasonings and cook until tender and brown.
- In a separate non stick pan, make scrambled eggs or however you enjoy your eggs.
- Add the meat back in to the potatoes, stir to warm and serve.
I have made it by cooking the eggs with the potatoes and meat and it does not come out as nice as making the eggs separately, but the flavor is still there. Enjoy it any way you want to!
