Ever since I moved to California 45 years ago. I’ve had a relationship with Mexican food.
It’s an on and off love relationship. The reason I say that is because it’s also the cause of many pounds packing on my body over the years.
So now I look for ways to save calories, but still enjoy the flavors. One of the ways I do that is by making ultra low-carb beef enchiladas or cheese enchiladas that I don’t have a whole lot of guilt eating.
So I’m going to share with you that recipe below. It’s super simple and I know that you will really enjoy it.
Ultra Low Carb Beef Enchiladas Recipe
Here’s the ingredients;
- One large can of red enchilada sauce
- Ultra low carb keto approved tortillas like Xtreme
- Mexican Blend cheese.
Optional: items such as onion or olive.
Also, optional: Sour cream and/or avocado slices on the top.
Directions:
** The trick with using canned enchilada sauce is you need to warm it up before using. Then you dip your tortilla in the warm sauce, add the ingredients, roll it, and place it in the baking pan.
In a 13 x 9 baking dish, put a small amount of enchilada sauce on the bottom.
In a frying pan, add a good amount of sauce and slowly warm it. Then take the tortilla, whether you’re using flour or corn, and quickly dip it on both sides in the warm sauce, just to moisten.
Place it on a plate of some sort and add in your cheese and beef, as well as optional items. Note: this could also be made with just cheese. Roll it up and place it in the baking dish.
Continue to do this for as many as you want to make.
Once it’s completed, put the remaining enchilada sauce on top of the enchiladas. Sprinkle with cheese. I added olives on top. You can also add them in the mix inside.
Heat for about 30 minutes at 350 just to warm everything through.
Serve with your favorite rice, beans, a salad – whatever makes your heart sing!
