The one thing I figured out over the years since we have been empty nesters is that I never really liked to cook big meals. I am more of a one or two-pot meal person- very simple and easy to get on the table.
Today I was actually planning ahead… The key to success with meals! LOL I decided that I would cook a bunch today and prepare for the week.
While I was prepping my meat, I also grabbed a steak from the freezer, defrosted that, and threw it in a pan right along with it.
My hubby was bugging me about making him a sandwich or something loaded with additives and I convinced him that we could have this amazing steak with a side of broccoli in 15 to 20 minutes max.
This is my kind of fast food. Healthy real food that took just a few minutes to make. This is how I prep for meal plans!
Easy Meals You Can Prep for Keto
This ribeye came from a whole loin that we cut ourselves. I seasoned it with seasoned salt, cracked pepper, and granulated garlic. I threw it in a hot pan with sizzling butter.
It was tender moist and delicious!!
Right alongside it, I added some steamed broccoli florets which were seasoned lightly with Lawrys seasoning salt and a little garlic.
I am so satisfied and this carries me over to my next meal tomorrow.
I also prepped some eggs for egg salad, always a favorite in this house, and hard-boiled to add to salads.
Also going on the stove was some hamburger for my salads.
Total Items I Prepped Today:
- Pan Fried Steak – make multiple and include some for your lunches!
- Hard Boiled Eggs
- Hamburger
- Quick Salad fixings
Total time for all 30 minutes, max!
Planning super simple meals will keep your meal prep fast so you can stay on track on your keto plan or any eating plan! I know this is huge! If I have plenty of options the less likely I will fall off plan and the more likely my hubby will choose something healthy too!
