It has been about seven weeks since I stopped eating meat. I can honestly say I really don’t miss it. I put myself about eating 98-99% no meat.

With that said yes, I have eaten some meat when I wanted to. I’m not denying myself anything. I’m just trying to make healthier choices that will impact my body overall.

Complex Carbs And Fiber Rock

I find myself eating more complex carbs than I should so I’m trying to transition into more veggies and fruits and reducing the amount of complex carbs.

I need to find a nice balance. Carbs are easy to do. I love the bread that I found at my grocery store. I love Wasa Crisps. I try to eat high fiber beans every day. I take plenty of vitamins and drink green juice daily

Complex carbs and high fiber keep me regular and they keep my blood sugar stable. I was having some difficulty with that up-and-down dizziness and my blood sugar actually dropping. I have to eat something about four times a day, which is fine.

Overall Results

What I’m finding now is I do have good energy. My legs do not swell as much. But I have to start eating more veggies than what I’ve been eating daily. My weight loss has stalled. I basically am not losing weight at all. That is frustrating so I know I need to tweak my diet.

Also what I found since I don’t really eat anything with artificial ingredients I can really tell when they are in something. My husband is following Wight Watchers and he shared a snack with me. It was one of their logo the items you buy at a meeting. All I could taste was the artificial ingredients. It was not good. I’ll take my snacks over theirs any time.

Refining

So what I’m going to start work on is:

More veggies
Increase my water
Add in more fruits
Work on my balance of complex carbs
Try to get walking/dancing/rebounding – something – more
