Ingredients

Dry Small White Beans

Ham Bone or 2-3 good size Ham Hocks

Carrot Pieces

Kielbasa, sliced into rounds

potato flakes
Instructions
8 hours prior or the night before cooking, soak the beans in water
Prior to cooking, drain and rinse the beans
In a large Dutch Oven or small stock pot, add beans, ham bones, and cover with water
Bring to a boil, the carrots, and seasoning. Reduce to a slow rolling boil. Cover with a slight vent
Allow to slow simmer for several hours until the beans are tender and the meat is falling off the bone
Remove the bones and place on a cutting board to cool
Take your wooden spoon and smash some of the beans on the side of the pot to break them up somewhat and thicken the soup
If it is not as thick as you would like, bring back to a boil and add 1/2 cup potato flakes and stir well
Strip the bones of meat and add back to the pot. Add additional meat like Kielbasa or ham chunks for a full meal
Taste and re-season as needed
Notes
Perfect for a hearty meal, serve with crusty bread or a side salad.
