Ingredients

  • 1 lb Dry Small White Beans
  • 1 Ham Bone or 2-3 good size Ham Hocks
  • 1 cup Carrot Pieces
  • 6-10 Shots Maggi Seasoning
  • 1-2 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Granulated Garlic

Optional

  • 1 Kielbasa, sliced into rounds
  • 1/2 cup potato flakes

Instructions

  • 8 hours prior or the night before cooking, soak the beans in water
  • Prior to cooking, drain and rinse the beans
  • In a large Dutch Oven or small stock pot, add beans, ham bones, and cover with water
  • Bring to a boil, the carrots, and seasoning. Reduce to a slow rolling boil. Cover with a slight vent
  • Allow to slow simmer for several hours until the beans are tender and the meat is falling off the bone
  • Remove the bones and place on a cutting board to cool
  • Take your wooden spoon and smash some of the beans on the side of the pot to break them up somewhat and thicken the soup
  • If it is not as thick as you would like, bring back to a boil and add 1/2 cup potato flakes and stir well
  • Strip the bones of meat and add back to the pot. Add additional meat like Kielbasa or ham chunks for a full meal
  • Taste and re-season as needed

Notes

Perfect for a hearty meal, serve with crusty bread or a side salad.
